  • 1 can (15 ounces) of drained chickpeas
  • 1 cup of pumpkin puree (which isn’t pie filling)
  • 1 smashed garlic clove
  • ¾ teaspoon of salt
  • 1 teaspoon of ground cumin
  • 2 tablespoons of lemon juice
  • 2 teaspoons of maple syrup
  • 2 tablespoons of applesauce
  • 1 tablespoon of olive oil
  • 1-2 tablespoons of water (optional)
  • Dried cranberries (optional)

  1. Add the chickpeas, garlic, and pumpkin puree into a food processor or a blender, stopping occasionally to scrape down the mixture of ingredients until it all becomes mostly smooth.
  2. Add in the cumin, maple syrup, salt, lemon juice, 1 tablespoon of olive oil, and the applesauce.
  3. Continue to process/blend all the ingredients together until they become smooth, also scraping down the sides as needed along the way.
  4. If consistency seems too thick, optionally add in a tablespoon or two of water.
  5. Pour mixture into a container with a lid that fits tight, and refrigerate.
  6. Just before serving, mix in some dried cranberries according to preference.
